CHC in partnership with Fort York National Historic Site presented Mad for Marmalade, Crazy for Citrus! Feb 27 2010Our third annual Mad for Marmalade event was a huge success with nearly 100 people in attendance! Eight different morning workshops were availlable to attendees, on topics from making candied peel to marmalade with an Asian twist, and from jar sealing techniques from the 18th century (think: pig bladders!) to Tomato Marmalade with a good deal of tomato history thrown in. In the afternoon, speaker Mary Williamson fascinated attendees with her talk about marmalade in early Canadian history. Afterwards, a citrus tasting event with historical recipes for Sherbet, Lemonade, and Negus Ice were presented to all attendees. Finally, door prizes were handed out and most importantly, the marmalade competition winners were announced. More than 35 marmalades and marmalade-based foods were submitted for this year's competition. As always at CHC events, the food was spectacular. During the morning refreshments, lemon muffins, marmalade cake, scotch shortbread and light orange almond fruitcake were served. Lunch featured fancy citron preserves, marmalade chicken, citrus risotto, and green salad with citrus dressing, followed by bread pudding with candied peel and custard sauce, peach, pear and marmalade tarts for dessert.
